NYT mentions two recent publications (both coauthored with Matthias Rieger) that analyzed the impact of a food policy enacted in Denmark and several NY counties, which reduced the amount of artificial trans fat in the food supply. The studies demonstrate that implementation of this policy caused a decline in heart disease and stroke deaths.
